The ones that matter for hands-on teaching have a sink and a floor you can spill on. That single amenity separates a room where you can run a pottery, baking or art jamming session from one where you can only talk. Filter for it rather than hoping.

Capacity is the thing you are paying for

Rates track capacity more than anything else. A room for ten is inexpensive; a room for thirty with staging costs several times that. Because workshops usually run three to six hours, compare the daily rate against the hourly before booking; for anything past about four hours, daily is generally cheaper. Add setup and clearing time to the booking, especially for craft sessions where the clearing is the long part.

Layout is the thing people get wrong

The same square footage seats very different numbers depending on how you arrange it. Theatre-style seating fits roughly twice what a table layout does, and a hands-on craft session needs more elbow room per person than either. The max pax on a listing is the room's limit, not a recommendation for your format. Work back from your own layout, then check it fits. Ask the host whether tables can be moved, because in some spaces they cannot.
